    will walk away able to make authentic sanuki udon Discovering Udo n takes place Wednesday May 21 6 30 pm at Japan Society Chopsticks New York notes that udon dough is kneaded for a long time to produce its firm texture In the case of sanuki udon the noodles are cooked for about 12 minutes and are removed after boiling and shocked in cold water This removes the slimy feel and lowers the udon s temperature to give it its bite Japan Udon Association describes sanuki udon as the famous local specialty of Kagawa Prefecture on the island of Shikoku it is the most renowned even of the three great udon varieties in addition to inaniwa and mizusawa and the people of Kagawa have the highest per capita udon consumption anywhere in Japan Large numbers of tourists from all over Japan come to eat the noodles and they form a key part of the region s cuisine They are characterized by firmness and a smooth fluid texture that comes from stomping on the dough after it is kneaded Though legend has it that sankui udon was brought from China by famed monk Kukai in the ninth century the New York Times wrote that little was widley known about sanuki udon until 2002 after the book Osorubeki Sanuki Udon The Magic of Sanuki Udon was published By 2004 the fad took off for the thick springy noodle made from fine white flour with noticeable chewiness achieved by walking or dancing on the dough Osamu Miyoshi was born in 1964 to the owners of Hinode noodle making factory which was founded in 1930 in Sakaide Kagawa Prefecture After graduating from the local high school and going away to college in Osaka he began work at a large noodle making company Miyoshi was surprised to see the level of automation present in the noodle making process considering he spent his mornings and evening helping his family make udon by hand all the way through high school However it was clear to him that there was quite a gap between handmade and machine processed udon and he dedicated himself to developing his noodle making technique In 1994 he was the recipient of the Ministry of Agriculture Forestry and Fisheries Minister s Award at the Kagawa Sanuki Udon Competition which he has now won a total of six times He has also won the Governor s Prize among numerous others From 2004 he has traveled to New York annually to do udon events and even appeared in the opening scene of the movie UDON which takes place in New York Miyoshi has also served in the role of advisor for Kagawa s food and agriculture and spent time volunteering as an udon lecturer However his main work is at Hinode noodle making factory where he serves as President Founded in 1907 Japan Society is a multidisciplinary hub for global leaders artists scholars educators and English and Japanese speaking audiences At the Society more than 100

    feature video and visuals of Nakaya s work According to the Guggenheim Bilbao which presented Nakaya s Fog Sculpture 08025 F O G in 1998 Fujiko Nakaya is the first artist to have worked with fog as a sculptural medium This is not to say that she molds the medium according to her own conception rather her approach is a subtle collaboration with water atmosphere air currents and time itself Experiential and ephemeral in nature her fog sculptures have certain affinities with Conceptual and Land art but nevertheless represent a radical departure in the history of art and technology Fujiko Nakaya was born in Sapporo Japan in 1933 Her father Ukichiro Nakaya a physicist credited with making the first artificial snowflakes had an impact on her work and as a young art student she became interested in working with cloud like forms In 1970 at the World Expo in Osaka Japan Nakaya created the world s first fog sculpture when she enveloped the Pepsi Pavilion in a vaporous mist in collaboration with the legendary artist collaborative Experiments in Art and Technology E A T Nakaya has created fog installations around the world including projects for the Guggenheim Museum Bilbao the Grand Palais Paris the Australian National Gallery Canberra and the Exploratorium San Francisco among others She consulted with architects Diller Scofidio Renfro on the Blur Building for the 2002 Swiss Expo and has worked with numerous artists including Trisha Brown David Tudor and Bill Viola on environments for music and performance In addition to being Nakaya s first large scale installation on the East Coast of the U S Fujiko Nakaya Veil marks the first time her work has been presented at an internationally renowned historic site Henry Urbach became Director of the Glass House New Canaan CT in April 2012 Previously he was Curator of Architecture and Design at the San Francisco Museum of Modern Art and prior to that directed Henry Urbach Architecture a gallery of contemporary art and architecture in New York Urbach completed his Master of Architecture degree at Columbia University and his M A in History and Theory of Architecture at Princeton University He has taught at several schools of architecture including UCLA and Yale University and has written extensively about art architecture and culture Julie Martin presider joined the staff of Experiments in Art and Technology in 1967 Over the years he has worked closely with Billy Klüver on projects and activities of the organization in particular on the design and construction of the Pepsi Pavilion for Expo 70 in Osaka Japan where Fujiko Nakaya developed her first fog sculpture for the outside of the pavilion building She was co editor Pavilion 1972 and co author of Kiki s Paris 1989 In 2010 she was coordinating producer for MoonRain a collaboration with Nakaya combining fog video projection and live performers presented at Dia Beacon Currently she is executive producer of a series of films being produced by E A T and released on DVD

    Luca Veggetti Choreographer Director was born in Bologna in 1963 trained at La Scala and danced in London and the U S Veggetti began his career as a choreographer and director in 1990 With a keen interest in contemporary music experimental forms and new technologies Veggetti has collaborated with esteemed musical ensembles and composers such as Sylvano Bussotti Toshio Hosokawa and Kaija Saariaho In 1999 he became the first 20th century Italian choreographer invited to work with the legendary Kirov Ballet at the Mariinsky Theatre in St Petersburg In 2004 he was invited by Peter Martins to participate in two sessions of the New York Choreographic Institute creating November Steps with The School of American Ballet and Duo with the New York City Ballet Since March 2007 the Works Process series at the Guggenheim in co production with the Miller Theater has produced and presented works directed choreographed by Veggetti notably an evening centered on the music of Toshio Hosokawa the world premiere of Iannis Xenakis Oresteia in its complete version of which The New York Times remarked Luca Veggetti found a fine expressive balance between fluidity and jaggedness modern sensibility and imagined antiquity and the U S premiere of Kaija Saariaho s full length dance piece Maa He collaborated with composer Paolo Aralla on number of dance and theater pieces including Silence Text Joyce Theater Four Voice Miller Theater both with New York City Ballet dancers and Play for dancer and Nothing for Milanoltre Festival Veggetti has received commissions to create works for the Martha Graham Dance Company Cedar Lake NY Spoleto Festival in Italy The Juilliard School and Morphoses to name a few His piece Meditation on Violence was awarded a Golden Mask in Moscow after its performance at the Bolshoi Theatre 2012 Upcoming engagements include the staging of Toshio Hosokawa s monodrama The Raven at the 2014 NY PHIL BIENNIAL a new initiative by the New York Philharmonic and the opera Vision of Lear also composed by Hosokawa scheduled to premiere in Hiroshima Greek French composer Iannis Xenakis one of the most significant post war avant garde composers was born in Romania in 1922 and later became a naturalized citizen of France Having studied mathematics and worked in the field of architecture for Le Corbusier he pioneered the use of mathematical models in music contributed to the evolution of electronic music and created site specific sound installations and compositions Major works include Metastaseis with independent parts for every musician in the orchestra noteworthy percussion works Psappha and Pléiades and Terretektorh which positioned musicians within the audience and large scale multimedia works he referred to as polytopes In the 2013 14 season J apan Society s 60th Anniversary Performing Arts Season Japan the U S Beyond the Japan Society Performing Arts Program celebrates its kanreki one s 60th birthday with a range of international cross cultural collaborations encompassing beloved encore performances world and U S premieres legendary performers and emerging artists In Japanese tradition kanreki is a special
